Ghee also known as clarified butter is a regularly used ingredient in the Indian kitchen, and is considered to be a symbol of wealth and prosperity of a family. However, there have been several cases around adulteration of ghee. Rancid ghee also known as vanaspati is often sold in the name of ghee, this is simply because of the similar colour and texture. According to Ayurveda, ghee is an important ingredient used for Ayurvedic medicines as it is promotes good health and helps in growth.

Apart from this, it detoxifies the whole body and provides nutrition. In order to check if the ghee you are using is pure or not, there are several tests that you can easily try at home.

Some of them are listed below:. One of the simplest methods you can use to find the impurity of ghee is by heating a teaspoon of ghee in a vessel. If ghee melts immediately and turns dark brownish in colour, then it is pure ghee. If it takes time to melt and turns into light yellow in colour, then it is adulterated.

To check the adulteration with coconut oil, melt some ghee in a glass jar using the double-boiler method and pour into the glass jar, put this jar in the fridge. If ghee and the coconut oil will solidify in separate layers, then the ghee is adulterated else the ghee you are using is pure. Heat a tablespoon of ghee in a test tube, and add an equal amount of concentrated HCl with a pinch of sugar.

Shake well to mix the ingredients. Pour a teaspoon of ghee in your palm, if it starts to melt by itself than it is pure else the ghee you are using is adulterated. Here is another experimental testing of the purity of ghee. Just add iodine solution in a small quality of melted ghee. How to check the purity of Ghee

Indicated values for commonly used parameters to differentiate pure and adulterated ghee materials are many a times overlapping. Among reported techniques, ultraviolet fluorescence and paper chromatography technique are not that much sensitive while other methods require sophisticated instrumental facilities such as gas chromatography, mass spectrometry and costly analytical processes. The present paper deals with a promising spectroscopic method to determine the tallow adulteration in cow ghee. Ghee and tallow taken in chloroform as such and mixed in different proportions were scanned by spectrophotometer and their second order spectra were analyzed. The value of the ratio of the absorbance of peaks at about nm and nm steadily decreases with the increasing proportion of tallow. This decrease shows consistent linearity suggesting its applicability for quantitative estimation of tallow in cow ghee. The developed derivative spectroscopic method is a rapid, sensitive, cost-effective method for detection of tallow adulteration in cow ghee.
